Quinoa Veggie Stir-Fry



This Quinoa Veggie Stir-Fry is a delicious and nutritious vegan meal that's gluten-free and packed with flavor. Loaded with colorful vegetables and protein-rich quinoa, it's a satisfying dish perfect for lunch or dinner. The savory-sweet sauce brings everything together beautifully.

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 zucchini, diced
  • 1 cup broccoli florets
  • 1 cup snow peas
  • 1/4 cup tamari or soy sauce
  • 2 tablespoons maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

In a medium saucepan, combine quinoa and water

Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed

Fluff with a fork and set aside

In a large skillet or wok, heat olive oil over medium-high heat

Add onion and garlic, saut until fragrant

Add bell peppers, zucchini, broccoli, and snow peas

Cook for 5-7 minutes, or until vegetables are tender-crisp

In a small bowl, whisk together tamari or soy sauce, maple syrup, rice vinegar, and grated ginger

Pour over the vegetables in the skillet

Add cooked quinoa to the skillet and toss to combine, ensuring the quinoa is evenly coated with the sauce

Season with salt and pepper to taste

Cook for an additional 2-3 minutes, allowing flavors to meld together

Remove from heat and garnish with fresh cilantro before serving

Serve hot and enjoy!
