Ingredients:
- 1 lb chicken breast, diced
- 16 oz potato gnocchi
- 2 cups Alfredo sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions:
Preheat oven to 375F 190C
Cook gnocchi according to package instructions; drain and set aside
In a skillet, cook diced chicken until no longer pink; season with salt and pepper
In a large bowl, mix cooked gnocchi, cooked chicken, Alfredo sauce, and half of the shredded mozzarella
Transfer mixture to a greased casserole dish
Top with remaining shredded mozzarella and grated Parmesan cheese
Bake for 20-25 minutes, or until bubbly and cheese is melted and golden brown
Garnish with chopped parsley before serving
