Blueberry, Corn and Basil Quinoa Salad



The sweet blueberries, crunchy corn, and fragrant fresh basil in this colorful and refreshing salad go well with the protein-rich quinoa. It's dressed with a simple balsamic vinaigrette, which makes the flavors go well together.

Ingredients:

  • 1 cup cooked quinoa
  • 1 cup blueberries
  • 1 cup corn kernels fresh or frozen
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions:

In a large mixing bowl, combine the cooked quinoa, blueberries, corn, basil, red onion, and feta cheese

In a small bowl, whisk together the olive oil and balsamic vinegar to create the dressing

Pour the dressing over the salad ingredients and toss until everything is well combined

Season the salad with salt and pepper to taste

Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together
