Ingredients:
- 1 lb shrimp, peeled and deveined
- 2 tbsp blackening seasoning
- 2 tbsp olive oil
- 8 small corn tortillas
- 2 ripe avocados, diced
- 1 cup diced pineapple
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 jalapeno, seeded and diced
- Juice of 1 lime
- Salt and pepper to taste
Instructions:
In a bowl, toss shrimp with blackening seasoning until evenly coated
