This Lemongrass Tofu recipe is a vegan twist on a classic Vietnamese dish, packed with flavor and protein. The combination of lemongrass, garlic, and soy sauce creates a savory and aromatic marinade that infuses the tofu with vibrant taste.   Ingredients:
- 300g firm tofu, pressed and cut into cubes
 - 2 stalks lemongrass, finely chopped
 - 3 cloves garlic, minced
 - 1 small onion, finely chopped
 - 2 tablespoons soy sauce
 - 1 tablespoon maple syrup or agave nectar
 - 1 tablespoon sesame oil
 - 1 tablespoon lime juice
 - 1 tablespoon vegetable oil
 - Salt and pepper to taste
 - Fresh cilantro for garnish
 
Instructions:
In a bowl, mix soy sauce, maple syrup, sesame oil, and lime juice to make the marinade
Add tofu cubes to the marinade, coat well, and let it sit for 10 minutes
In a pan, heat vegetable oil over medium heat
Add chopped lemongrass, garlic, and onion
Saut until fragrant
Add marinated tofu cubes to the pan
Cook for 8-10 minutes, stirring occasionally, until tofu is golden brown and crispy
Season with salt and pepper to taste
Garnish with fresh cilantro before serving
Serve hot with rice or noodles
